Barbacoa Torta with Fiery Citrus Slaw

Ingredients

Fiery Cabbage Slaw

  • 3 Tbsp. mayonnaise

  • 1 Tbsp. cider vinegar

  • 1 tsp. red pepper sauce

  • ½ tsp. sugar

  • ¼ tsp. Kosher salt

  • ¼ tsp. freshly ground black pepper

  • 3 cups cabbage, finely shredded

  • ½ cup carrots, grated

  • 2 green onions, thinly sliced on the diagonal

Preparation

  1. Whisk together mayonnaise, vinegar, red pepper sauce, sugar, salt and pepper in a large bowl.  Add cabbage, carrots and green onion. Toss gently to combine.

  2.  Place 4-oz of beef barbacoa on the bottom half of the rolls.  Top with slaw and close sandwiches. Serve immediately.

Suggestions

Kitchen Tip:  If you can’t find bolillos rolls, use French bread or sandwich buns.
