Mediterranean Beef Steak and Veggie Pita

Ingredients

  • 1 beef Flank Steak (about 1-1/2 pounds)

Color Mix:

  • 1/3 cup feta cheese

  • 1 dozen cherry tomatoes, sliced

  • 1 cucumber, diced

  • 1/4 cup oregano

  • 1 red onion, diced

  • 1 lemon, zested and juiced

  • A Pinch of salt and pepper

  • 1 tablespoon extra-virgin olive oil

Easy Salsa:

  • 1 cup fresh parsley

  • 1 cup fresh basil

  • Pinch of salt

  • 1 garlic clove, chopped

  • 1 teaspoon chili peppers

  • 2 tablespoons extra-virgin olive oil

  • Whole wheat pita bread

  • 1 cup hummus

Preparation

  1. Combine all the ingredients for the color mix into a bowl & set aside for at least 20 minutes.

  2. In a bender or food processor blitz all the salsa ingredients for 1-2 minutes, set aside.

  3. Heat large, nonstick skillet over medium until hot. Add steak and cook for 10-13 minutes flipping every 1 minute. Allow to rest for 10 minutes.

  4. To serve the place a dollop of hummus on the pita. Spoon a portion of the color mix on top of the hummus. Slice the steak and layer on top of the color mix. Add a portion of the easy salsa on top. Enjoy!
