Make-Ahead Breakfasts

September is Better Breakfast Month, and it couldn’t come at a better time to celebrate. Fall is a busy time of year and it’s so easy to forget the importance of breakfast. Between getting the kids ready for school and preparing for your day, mornings are just tough. You’re lucky if everyone leaves the house with granola bars in hand!

Resorting to empty calories is a quick fix, but you and your family might find yourselves hungry long before the lunch bell rings. Getting 25-30 grams of protein in the morning puts you on track to make healthier choices throughout the day.

We’re the first ones to admit that cooking a full-blown breakfast on weekdays can seem impossible. That’s why we’ve put together some make-ahead meal ideas to pack a protein punch without the hassle! Batch cook on a weekend, throw in the freezer and have 5-minute prep on busy mornings!

Brunch Beef Strata

This recipe could feed a family of four a couple times and could be great to save for fancy brunch events, too!

Follow recipe instructions through Step 4, except for refrigerating. Cover strata with foil (preferably two layers) and place in the freezer on a flat surface.

When you’re ready to enjoy, remove from freezer and thaw completely before baking.

Beef Sausage & Egg Muffin Cups

These muffins have over 30 grams of protein per serving and only take 40 minutes!

Follow recipe instructions completely, bake and let stand until completely cool.

Put muffins in a zip-top bag and store in the freezer. To reheat from frozen, just pop in the microwave for 1 minute!

Beef & Spinach Breakfast Sandwiches

Move over, Jimmy Dean. Change your grab-n-go game for the better!

A dozen of these sandwiches can be thrown together in 30 minutes and they’re ready for the freezer. Layer scrambled eggs with Swiss cheese and roast beef from the deli on whole wheat sandwich thins.

Wrap in aluminum foil and write the date with marker. Store in the freezer for up to 3 months!
